I have collected the best cake filling recipe ideas for layered cakes, cupcakes, pastries, and more. These are all reliable recipes to turn your desserts into the most delicious sweet treats!
This recipe roundup was originally shared on the blog in 2023. I’ve been updating it ever since with new cake fillings, so you always have the most comprehensive list for all your cake needs.
Maybe it's a special birthday or celebration coming up, or perhaps you're browsing wedding cake flavors and filling combinations. You have come to the right place!

Katalin's key take on what makes the perfect cake filling
The best cake filling does more than add flavor between the layers. It should complement the cake rather than overpower it, provide sufficient stability to support stacking, and retain a smooth texture after slicing. I always think about balance first. Whether it’s a rich, creamy buttercream or a tangy fruit curd, the key is in the quality of ingredients and the right consistency.
I often recommend using a less sweet, delicate filling, such as cream cheese frosting or fruit curd, between the cake layers. This allows the flavors to shine in every bite. For the outer frosting, I suggest opting for more stable recipes (e.g., Swiss meringue buttercream) to ensure a smooth, sturdy finish that holds up throughout the cake’s presentation. This combination provides a balance of texture, flavor, and durability for a perfect cake experience.
One of the biggest mistakes I see home bakers make is choosing a filling based only on taste without considering how it behaves. Some fillings are perfect for serving immediately but too soft for layered celebration cakes, while others hold their shape beautifully even at room temperature.
Matching the filling to the type of cake, the weather, and how long the cake needs to sit before serving is just as important as choosing delicious flavors. That's the difference between a homemade cake that looks good and one that looks and tastes like it came from a professional bakery.

4. Swiss Meringue Buttercream

SMBC, as it is known in the culinary world, is one of the most common cake fillings and frostings. It is made by dissolving sugar into egg whites over gentle heat and then whipping them into a meringue before adding softened butter. The result is a silky, stable cake filling that everyone loves.

18. German buttercream

Easy German Buttercream (or crème mousseline) is my favorite buttercream frosting. Basically, it's a simple pastry cream enriched with butter, so it is a bit more complex to make, but it isn't as sweet as American buttercream. It's super smooth and silky, and the best cake filling for a variety of desserts, from layer cakes (this is probably one of the best cake filling ideas for vanilla cake) and cupcakes to French macarons.
19. Whipped chocolate ganache frosting

Who can resist a decadent whipped chocolate ganache frosting slathered on a chocolate layer cake? Not me. This smooth and silky whipped chocolate ganache is one of the original and best cake fillings around. Ganache frosting is also very easy to make, even for beginner bakers.
20. Lemon curd

You can use lemon curd in so many desserts, and making it from scratch is a valuable kitchen skill. Caramel filling tastes especially delicious with apples and Fall flavors, but I enjoy it at any time of year, such as these chocolate caramel cupcakes.
23. Nutella frosting

Rich chocolate cake with Nutella frosting has to be one of the most popular birthday cake flavors and fillings. Because who doesn't love the rich and smooth chocolate hazelnut spread? The nutty flavor tames the sweetness slightly, but overall, this is a super decadent cake filling for serious chocoholics only. Make sure to try these Nutella cupcakes, Nutella cake, and Ferrero Rocher cake.
24. Crème pâtissière

A crème pâtissière or vanilla custard cake filling is one of the classics used in so many French pastries. It is a rich, thick custard made from milk, eggs, and starch, and it's well worth learning to make! A cake layered with pastry cream will be a real showstopper.
25. Namelaka

Chocolate namelaka is the most delicious cream that you can use to fill, frost, or beautifully decorate your desserts. 32. Strawberry compote

Strawberry compote is a classic summer cake filling and one of my all-time favorite fillings for layer cakes like Victoria sponge. It has such a fresh fruity flavor, and what's more, it is a lot easier to make than you'd think!
33. Whipped Chantilly cream

Whipped cream, or Chantilly, has to be the most versatile cake filling: it tastes delicious on its own, and it can also be flavored. Or, it can be paired with other frostings, such as strawberry compote or homemade Nutella. Whipped cream is also one of the best decoration elements or fillings for chocolate cake layers. Try it on my Berry Chantilly cake!

35. Biscoff buttercream

Biscoff-flavored German buttercream frosting? Undoubtedly, this might be the most delicious frosting that you will ever make! 36. Hazelnut frosting

Try this luxuriously silky hazelnut mousseline cream for the most amazingly decadent cake filling. It is enriched with hazelnut praline paste for the most incredibly nutty flavor. In fact, hazelnut works very well with chocolate and coffee, and hazelnut and raspberry are another one of the best cake filling combinations.
37. Pistachio ganache

Pistachio ganache is so full of pistachio flavor and much less sweet than a buttercream frosting. Making a pistachio ganache cake filling means you get nutty flavor and richness from white chocolate and heavy cream, but the lower sweetness perfectly balances your cake. Moreover, pistachio ganache is one of my personal favorites for filling macarons.
38. Raspberry ganache

You have to make this delicious raspberry ganache; it is the best raspberry cake filling. Tangy and sweet raspberries are blended with whipping cream and white chocolate, which perfectly take on their flavor. You can use raspberry ganache for tarts, layer cakes, or as a macaron or cupcake filling.

45. Homemade or store-bought jams

One of the most classic and easiest cake fillings is jam, whether homemade or store-bought. Think of the iconic Sacher Torte, where a thin layer of apricot jam is spread between dense chocolate sponge layers, adding moisture, brightness, and a subtle fruity contrast that balances the cake's richness. The beauty of jam fillings lies in their simplicity and versatility.
46. Chocolate-based confections like Ferrero Rocher
Chocolate-based confections like Ferrero Rocher also make indulgent cake fillings, especially in celebration cakes and layered desserts. Crushed or lightly chopped pieces of Ferrero Rocher add a mix of textures—crunchy hazelnut, crisp wafer, and smooth chocolate—that contrast beautifully with soft sponge or mousse. Check my Ferrero Rocher cake for the technique and recipe!

Frequently asked questions about cake fillings
What is the best filling for a cake that won’t make it soggy?
You might have read elsewhere that the thicker fillings, like buttercream and ganache, work best because they hold structure and don’t release excess moisture into the sponge. While it is technically true, thick filling almost never melts in your mouth and delicous enough.
What prevents sogginess is less about choosing a “thick” filling and more about how the sponge and filling interact. A properly baked, fully cooled sponge with a stable crumb can handle even softer fillings, such as fruit compotes or curds, without breaking down. The key is moisture control at the surface: the cake layers must be completely cool before filling, and the filling should be applied in a controlled layer rather than overloaded.
Can I use jam straight from the jar as a cake filling?
Yes, but it’s best to stir it first to loosen the texture and spread it in a thin, even layer. Very runny jams should be cooked down slightly or mixed with a little cornstarch to prevent leakage between layers.
How do I stop cake fillings from sliding out?
Chill the cake between layers during assembly so the filling sets slightly before stacking additional layers. Using a buttercream “dam” around the edge of each layer also helps contain softer fillings, such as curds, creams, or fruit compotes.
Can I mix textures in cake fillings?
Yes, combining textures is actually one of the most effective ways to build interest. Creamy bases like mascarpone or whipped ganache can be paired with crunchy elements such as nuts, biscuit crumbs, or chopped chocolates for contrast and depth.

Hi Katalin, all these cake fillings sound so delicious, I can’t wait to try them! I’ve heard that sometimes you should “dam” a cake if the fillings are too soft or wet (especially if the cake will be covered in fondant), and the weather is warm. Just wanted to check which of these would/wouldn’t be stable enough for an outdoor event where the layered cake will be left out for a few hours? Thank you so much!!
Katalin Nagy
Dam a cake is a must for example when you have soft fillings eg. lemon curd. Regarding leaving the cake out for a few hours... it depends on the temperature but in general, apart from traditional buttercream that is butter and looooods of sugar, most of the delicate cake fillings and frostings cannot be left out for hours.
Don
I guess when I say hours, I mean roughly 3-4 hours, as realistically, the cake is out on display and eaten towards the end of the event. If I use one of your curd recipes, which other filling would be firm enough that I could dam the cake please? Thanks for sharing your knowledge! Always appreciated 🙏😊
Katalin Nagy
For 3-4h hours (depending on the weather temp and humidity) you don´t have too much choice other than swiss meringue buttercream or american buttercream. Good luck:)
Don
Thank you so much!!! 🙏😊
