📖 What is Lotus Biscoff Spread
Lotus Biscoff spread is a delicious smooth spread that is made of, yep, you guessed it, the legendary Lotus Biscoff cookie biscuits.
Lotus Biscoff Cookies itself was invented around 1932 in a Belgian town. It's marketed as a caramelized biscuit with natural ingredients. It's a popular speculoos cookie product. After gaining international fame, the company added Lotus Biscoff Spread to its product collection, a super creamy cookie butter spread that has a similar texture to peanut butter and that is totally addictive!
For every serving size (15 grams) Lotus Biscoff Spread contains 88 calories, 6 grams of fat, 8 grams of carbohydrates (5 of them are from sugar), and 0.5 grams of protein. Fat plays a significant role here, which contributes about 61% of the total calories.
There is another Biscoff spread alternative on the market, it's from Trader Joe's. However, Biscoff spread is a bit sweeter and way more delicious - in my humble opinion - than TJ's Speculoos Cookie Butter.
The original Lotus Biscoff Spread, as written on the labels, contains the original caramelized biscuits as its main ingredients followed by rapeseed oil, sugar, emulsifier, and acid.
I tried to make the replica of the Lotus Biscoff spread using ingredients similar to the original product, including the cookies and the oil. However, the result wasn’t great, as the ingredients didn’t emulsify properly when crafted using regular kitchen utensils.
So, I decided to experiment with some different ingredients (without excluding the biscuit) that provide the same, if not better taste and texture. Some of the major ingredients in this recipe, besides the Biscoff biscuit, the golden syrup, which gives the caramel-like flavor, and the evaporated milk, which gives amazing texture and creaminess. I also inluded cinnamon to add some spicy flavor.
Hands down, this homemade Biscoff Spread recipe taste as delicious as the original one, if not better!

📝 Ingredient notes
This Biscoff cookie butter will require only a few ingredients that are easy to find.
- Lotus Biscoff biscuits: This is obviously the main ingredient of homemade Lotus Biscoff spread. You will need the crumble of the biscuits. It means that you don’t necessarily need to use newly-bought Lotus Biscoff biscuits. If you have one at home with some crushed pieces you can still use it as long as it’s still far from the expiration date.
- Salt: It’s important to add a little pinch of salt to this recipe to prevent the final result from being too sweet. You can adjust the amount to your liking, but to be on the safe side, you can follow the measurement in this recipe.
- Cinnamon: Add this wonderful ingredient to add some sweet and spicy flavor to the Lotus spread!
- Vanilla Extract: Use real vanilla bean paste or vanilla extract for the best flavor
- Golden syrup: Besides the biscuits, golden syrup is the other source of sweetness in this recipe and it also adds texture. If you don’t have it at home, you can use dark syrup or brown sugar as a substitute. You will need the caramel flavor from these ingredients so please do not use white sugar. If you want to make a slightly healthy Biscoff spread recipe, you can use maple syrup since it has a lower glycemic index.
- Evaporated milk: It’s the primary source of the liquid in this recipe. Besides turning the solid ingredients into liquid form, evaporated milk brings the perfect creaminess! Remember to use room temperature evaporated milk.
- Freshly squeezed lemon juice - Fresh lemon juice will balance the sweetness of the ingredients without bringing too much lemon flavor. It also slightly lightens the spread in color. If possible, use fresh, organic lemon.

👩🍳 How to make this recipe
1. Step-by-step process
Making this homemade Lotus Biscuit spread is so easy and quick! I have outlined the important steps below to help you get the best result. So, be sure to follow this guide.
- Start by crushing the Lotus Biscoff biscuits. There are two options that you can choose from. The easy method is by putting the biscuits into the food processor and pulsing it until it becomes crumble. The old-school method includes a rolling pin and a ziplock bag. You will need to place the biscuits inside the bag and roll it or beat it using a rolling pin. The choice is yours, but I prefer using the ziplock bag method. The reason is simple; some food processors cannot do the job very well for this kind of biscuit because they need liquid to function well.
- Add the crushed biscuits to the food processor, followed by the remaining ingredients.
- Process the ingredients together for 2-3 minutes or until the mixture turns super smooth. If you prefer a crunchier texture, only process the mixture for 30 seconds.
- You can adjust the consistency of the spread by adding more Biscoff biscuits (for thicker consistency) or more evaporated milk (for a thinner consistency).
Your homemade Lotus Biscoff spread is ready! Feel free to use it on top of your cake, cookies, or toast.
Got some cookie butter spread left for future usage? You can place it in an airtight jar and store it in the fridge for 1-2 weeks!
💡 Top Tip: Do not skip the salt and lemon juice! You will only need a little amount of it, but it’s an important ingredient to balance the flavor and keep the spread from being too sweet!
2. Further important steps to make your cookie spread perfect
Making this homemade Lotus Biscoff spread is super easy and when you process the ingredients in the food processor, you’re nearly done with it. However, there are some recipe customizations that you can try. Things such as consistency, flavors, and texture are all important in a homemade spread and everyone has a different preference. So, if you want to control those things, be sure to try any of these ideas:
Consistency- The default result of this recipe has an amazing consistency already. However, if you want this homemade Biscoff cookie spread to be thicker, add more Biscoff biscuits to the food processor. To control the result, add the biscuit crumbles gradually and check the consistency after it’s mixed well. Do not add too many biscuits at once.
Flavor- You can adjust the taste and aroma of this homemade cookie butter by modifying the amount of lemon juice and salt. Or, feel free to experiment with other delicious ingredients such as cocoa powder or Nutella.
Spiciness- If you prefer a spicier version of this spread, try to add a little more cinnamon to the mixture and mix it well.
Texture- Everyone has a different preference when it comes to homemade spread. Some people love a crunchy texture and some people love smoothness. If you prefer a little crumble in your spread, you can process the mixture in less time (30 seconds is a good idea). However, if you prefer a smooth, delicate spread, you can let the food processor run for 2-3 minutes.
3. How long does it take for the cookie butter to set
This easy Biscoff spread recipe might get you wondering how long it takes for the homemade spread to set. The good news is, that you do not need to wait at all before using this homemade Lotus Biscoff spread!
You can use it immediately and creatively on top of your cake or cookies!
If you want a slight change in the consistency, you can place it in the fridge for an hour or you can simply adjust the texture by adding more biscuits or more evaporated milk to the mixture.
🥣 Equipment notes
This homemade Biscoff spread doesn't require too many complicated baking instruments.
First, you will need a Digital scale. Almost every baking recipes require ingredients in an exact amount, and this homemade spread recipe is no exception. Use the digital scale to measure the major ingredients in this recipe, except the lemon juice where you can use spoon measurement.
Another important piece of equipment in this recipe is a food processor or some sort of blender to make sure that the mixture is well-mixed and achieves the best consistency.

You can use this homemade Lotus Biscoff spread on top of your toast, pancakes, cupcake, loaf cake, cheesecake, waffles, sandwiches, and ice cream! Or just enjoy eating it straight out of the jar with a spoon!
Well, although it contains natural ingredients, it also has quite some sugar in it. It can be a healthier version of high-calories chocolate spreads but still, would not say that it is a particularly healthy product. Just like with any dessert, it should not be consumed too much or too often.
Besides adding it on top of your favorite baked goods, you can enjoy Biscoff spread as a fruit dip, as the filling of your macarons, as your ice cream topping, or simply eat it as is!
Technically, you can, but the taste will drastically change. If you want to replace Biscoff cookies biscuits, try other spiced speculoos biscuits or other biscuits that have caramel taste or brown sugar in the ingredient.
Of course, you can! To melt the Biscoff spread, you can simply place it in a bowl and microwave it for 10-15 seconds. Stir it carefully afterward. If you want a runnier texture, you can add evaporated milk or water to the bowl before putting it inside the microwave.
If you want to store the homemade Biscoff spread, place it inside an airtight jar and keep it refrigerated for two weeks.
Put this homemade Lotus Biscoff spread inside an airtight jar and keep it inside your freezer for an even longer shelf-life.

So easy. Processed to very smooth because I don’t like grainy texture and used it in a cake and in the icing. Gave away the cake but the icing was eye-popping good! I’m a Biscoff fan now.
Maisha
Do you think I can skip the syrup and salt? Me and my family are in low sugar and sodium diet.
Katalin Nagy
The syrup is needed for the texture but you can perhaps use more evaporated milk. The salt is needed to balance the flavors, at least add a pinch. This salt quantity is very low compared to eating processed food.
