📖 What is Lotus Biscoff Spread

Lotus Biscoff spread is a delicious smooth spread that is made of, yep, you guessed it, the legendary Lotus Biscoff cookie biscuits.

Lotus Biscoff Cookies itself was invented around 1932 in a Belgian town. It's marketed as a caramelized biscuit with natural ingredients. It's a popular speculoos cookie product. After gaining international fame, the company added Lotus Biscoff Spread to its product collection, a super creamy cookie butter spread that has a similar texture to peanut butter and that is totally addictive!

For every serving size (15 grams) Lotus Biscoff Spread contains 88 calories, 6 grams of fat, 8 grams of carbohydrates (5 of them are from sugar), and 0.5 grams of protein. Fat plays a significant role here, which contributes about 61% of the total calories.

There is another Biscoff spread alternative on the market, it's from Trader Joe's. However, Biscoff spread is a bit sweeter and way more delicious - in my humble opinion - than TJ's Speculoos Cookie Butter.

The original Lotus Biscoff Spread, as written on the labels, contains the original caramelized biscuits as its main ingredients followed by rapeseed oil, sugar, emulsifier, and acid.

I tried to make the replica of the Lotus Biscoff spread using ingredients similar to the original product, including the cookies and the oil. However, the result wasn’t great, as the ingredients didn’t emulsify properly when crafted using regular kitchen utensils.

So, I decided to experiment with some different ingredients (without excluding the biscuit) that provide the same, if not better taste and texture. Some of the major ingredients in this recipe, besides the Biscoff biscuit, the golden syrup, which gives the caramel-like flavor, and the evaporated milk, which gives amazing texture and creaminess. I also inluded cinnamon to add some spicy flavor.

Hands down, this homemade Biscoff Spread recipe taste as delicious as the original one, if not better!

This Biscoff cookie butter will require only a few ingredients that are easy to find.

  1. Lotus Biscoff biscuits: This is obviously the main ingredient of homemade Lotus Biscoff spread. You will need the crumble of the biscuits. It means that you don’t necessarily need to use newly-bought Lotus Biscoff biscuits. If you have one at home with some crushed pieces you can still use it as long as it’s still far from the expiration date.
  2. Salt: It’s important to add a little pinch of salt to this recipe to prevent the final result from being too sweet. You can adjust the amount to your liking, but to be on the safe side, you can follow the measurement in this recipe.
  3. Cinnamon: Add this wonderful ingredient to add some sweet and spicy flavor to the Lotus spread!
  4. Vanilla Extract: Use real vanilla bean paste or vanilla extract for the best flavor
  5. Golden syrup: Besides the biscuits, golden syrup is the other source of sweetness in this recipe and it also adds texture. If you don’t have it at home, you can use dark syrup or brown sugar as a substitute. You will need the caramel flavor from these ingredients so please do not use white sugar. If you want to make a slightly healthy Biscoff spread recipe, you can use maple syrup since it has a lower glycemic index.
  6. Evaporated milk: It’s the primary source of the liquid in this recipe. Besides turning the solid ingredients into liquid form, evaporated milk brings the perfect creaminess! Remember to use room temperature evaporated milk.

  1. Start by crushing the Lotus Biscoff biscuits. There are two options that you can choose from. The easy method is by putting the biscuits into the food processor and pulsing it until it becomes crumble. The old-school method includes a rolling pin and a ziplock bag. You will need to place the biscuits inside the bag and roll it or beat it using a rolling pin. The choice is yours, but I prefer using the ziplock bag method. The reason is simple; some food processors cannot do the job very well for this kind of biscuit because they need liquid to function well.
  2. Add the crushed biscuits to the food processor, followed by the remaining ingredients.
  3. Process the ingredients together for 2-3 minutes or until the mixture turns super smooth. If you prefer a crunchier texture, only process the mixture for 30 seconds.
  4. You can adjust the consistency of the spread by adding more Biscoff biscuits (for thicker consistency) or more evaporated milk (for a thinner consistency).

Your homemade Lotus Biscoff spread is ready! Feel free to use it on top of your cake, cookies, or toast.

Making this homemade Lotus Biscoff spread is super easy and when you process the ingredients in the food processor, you’re nearly done with it. However, there are some recipe customizations that you can try. Things such as consistency, flavors, and texture are all important in a homemade spread and everyone has a different preference. So, if you want to control those things, be sure to try any of these ideas:

Consistency- The default result of this recipe has an amazing consistency already. However, if you want this homemade Biscoff cookie spread to be thicker, add more Biscoff biscuits to the food processor. To control the result, add the biscuit crumbles gradually and check the consistency after it’s mixed well. Do not add too many biscuits at once.

Flavor- You can adjust the taste and aroma of this homemade cookie butter by modifying the amount of lemon juice and salt. Or, feel free to experiment with other delicious ingredients such as cocoa powder or Nutella.

Spiciness- If you prefer a spicier version of this spread, try to add a little more cinnamon to the mixture and mix it well.

Ingredients

  • 250 g Lotus Biscoff biscuits 1 bag (8.8oz)
  • ½ teaspoon Salt
  • ½ teaspoon Cinnamon
  • ½ teaspoon Vanilla extract
  • 25 g (1 tablespoon) Golden syrup can be substituted with another dark syrup or brown sugar
  • 130 g (½ cups) Evaporated milk
  • 2 teaspoon Lemon juice freshly squeezed

US customary cup measurement is an indicative figure only. Measure the ingredients with a digital scale by weight (gram). Baking is art but also science which requires precision and accuracy.

Instructions

  • The Biscoff Crumble can be made either in a food processor, or in a ziplock bag and beating it with a rolling pin until the cookies more or less evenly broken up
  • Then, move the mixture to the food processor and add the rest of the ingredients
  • Start processing the mixture for 2-3 minutes until the spread is super smooth. For a more rustic, crunhy texture, only process it for 30 seconds
  • If desired, add more Biscoff biscuits or evaporated milk to make the spread thicker / thinner
  • Use the spread according to the recipe
  • Store it in an airtight jar and keep it refrigerated for up to two weeks

    Do you think I can skip the syrup and salt? Me and my family are in low sugar and sodium diet.

      The syrup is needed for the texture but you can perhaps use more evaporated milk. The salt is needed to balance the flavors, at least add a pinch. This salt quantity is very low compared to eating processed food.

    I just made this and it's delicious! I added 1/2 tsp Cardamom and used unsweetened Almond milk instead of evaporated milk to minimize the added sugars. Fabulous!
