Hi Katalin, all these cake fillings sound so delicious, I can’t wait to try them! I’ve heard that sometimes you should “dam” a cake if the fillings are too soft or wet (especially if the cake will be covered in fondant), and the weather is warm. Just wanted to check which of these would/wouldn’t be stable enough for an outdoor event where the layered cake will be left out for a few hours? Thank you so much!!

Dam a cake is a must for example when you have soft fillings eg. lemon curd. Regarding leaving the cake out for a few hours... it depends on the temperature but in general, apart from traditional buttercream that is butter and looooods of sugar, most of the delicate cake fillings and frostings cannot be left out for hours.

I guess when I say hours, I mean roughly 3-4 hours, as realistically, the cake is out on display and eaten towards the end of the event. If I use one of your curd recipes, which other filling would be firm enough that I could dam the cake please? Thanks for sharing your knowledge! Always appreciated 🙏😊

For 3-4h hours (depending on the weather temp and humidity) you don´t have too much choice other than swiss meringue buttercream or american buttercream. Good luck:)
