What is Lotus Biscoff Spread

Biscoff spread is a delicious smooth spread that is made of, yep, you guessed it, the legendary Lotus Biscoff cookie biscuits.
There is another Biscoff spread alternative on the market, it's from Trader Joe's. However, Biscoff spread is a bit sweeter and way more delicious - in my humble opinion - than TJ's Speculoos Cookie Butter.
This cookie butter recipe can be made however with any other hard cookie of your choice but we really recommend Biscoff!
Why this recipe is better than the original
I tried to make a replica of the Lotus Biscoff spread using ingredients similar to the original product, including the cookies and the oil. However, the result wasn’t great, as the ingredients didn’t emulsify properly when crafted using regular kitchen utensils.
So, I decided to experiment with some different ingredients (without excluding the biscuit) that provide the same, if not better taste and texture. Some of the major ingredients in this recipe, besides the Biscoff biscuit, the golden syrup, which gives the caramel-like flavor, and the evaporated milk, which gives amazing texture and creaminess. I also included cinnamon to add some spicy flavor.
Hands down, this homemade Biscoff Spread recipe taste as delicious as the original one, if not better!
Ingredients
Lotus Biscoff biscuits - 1 bag (8.8oz) - use your favorite hard biscuits
½ teaspoon Salt
½ teaspoon Cinnamon
½ teaspoon Homemade vanilla extract
1 tablespoon Golden syrup can be substituted with another dark syrup or brown sugar
½ cup Evaporated milk
2 teaspoon Lemon juice - freshly squeezed
How to make this recipe
- Start by crushing the Lotus Biscoff biscuits. There are two options that you can choose from. The easy method is to put the biscuits into the food processor and pulse it until it becomes crumble. The old-school method includes a rolling pin and a ziplock bag. You will need to place the biscuits inside the bag and roll it or beat it using a rolling pin. The choice is yours, but I prefer using the ziplock bag method. The reason is simple; some food processors cannot do the job very well for this kind of biscuit because they need liquid to function well.
- Process all the ingredients together for 2-3 minutes or until the mixture turns super smooth. If you prefer a crunchier texture, only process the mixture for 30 seconds.
Top Tip: Do not skip the salt and lemon juice! You will only need a little amount of it, but it’s an important ingredient to balance the flavor and keep the spread from being too sweet!
Further important steps to make your cookie spread perfect
Consistency - The default result of this recipe has an amazing consistency already. However, if you want this homemade Biscoff cookie spread to be thicker, add more Biscoff biscuits to the food processor. To control the result, add the biscuit crumbles gradually and check the consistency after it’s mixed well. Do not add too many biscuits at once.
Flavor - You can adjust the taste and aroma of this homemade cookie butter by modifying the amount of lemon juice and salt. Or, feel free to experiment with other delicious ingredients such as cocoa powder or Nutella.
Spiciness - If you prefer a spicier version of this spread, try to add a little more cinnamon to the mixture and mix it well.
Texture - Everyone has a different preference when it comes to homemade spread. Some people love a crunchy texture and some people love smoothness. If you prefer a little crumble in your spread, you can process the mixture in less time (30 seconds is a good idea). However, if you prefer a smooth, delicate spread, you can let the food processor run for 2-3 minutes.
Expert tips
- Keep an eye on the mixture during the food processing. Know what your preference is and stop the food processor when it achieves your desired texture.
- Do not skip the salt and lemon juice! It’s an important ingredient to balance the taste of your Lotus cookie butter spread
- You can experiment by adding more cinnamon or vanilla to adjust the flavor to your preference.
