Katalin’s key take on what the common flavors are in Mediterranean desserts
I've visited the region throughout, and let me tell you, while geographically it is one area on the map, the flavors and textures are very different in Portugal vs. Turkey or Morocco.
The Mediterranean is a large region surrounding the Mediterranean Sea, known for its diverse culinary cultures. But while there are subregions within the area and many variations between North and South, East and West, many of them share common traits!
For example, many Southern and Eastern Mediterranean desserts use a lot of spices, nuts, dried fruits, honey, and syrups. The flavors can be warm, intense, and aromatic. Phyllo pastry desserts (also known as filo pastry) are typical in Mediterranean countries such as Turkey, Greece, Palestine, and Lebanon. Rice pudding-style desserts are also common, typically made from milk. And who could forget olive oil, which adds such velvety richness to cakes in the place of butter in some recipes.
By contrast, puff pastry and pate sablee are more common in France, Italy, and Spain, and the dairy used is mainly heavy cream, cream cheese, ricotta, or mascarpone. Fresh fruits like strawberries, raspberries, and lemons feature heavily.
But no matter which country you choose, desserts from the Mediterranean are deliciously fragrant, balanced, and full of flavor. So get your sweet tooth ready!
