👩🍳 How to make this recipe
1. Step-by-step process of making the Red White Blue Cupcakes
1. Preheat your oven to 175 C / 347°F (no fan)
2. In a large mixing bowl, using an electric hand mixer, cream the butter and sugar together until fluffy.
3. Add the eggs one at a time thoroughly mixing after each addition. Be careful not to overbeat the mixture.
4. In a separate mixing bowl, whisk together the dry ingredients (flour, baking powder, and salt).
5. Beginning with the milk, in 4 stages, alternate between adding the milk and the dry ingredients to the butter and sugar mixture. Use a rubber spatula to fold each portion in. Finish with the dry ingredients.
6. In a small mixing bowl, combine the vinegar and baking soda and fold them into the cupcake batter immediately.
7. Divide the cupcake mix into 3 even parts. Using gel food coloring, color one part blue and one part red. Leave the third part white.
7. Spoon or pipe the mixture into your cupcake pan until ¾. Feel free to use cupcake liners for easier cleanup. You can layer the batter or mix and match colors to your liking for these July 4 cupcakes.
8. Bake for 25 minutes 175 C / 347°F (no fan) or until a toothpick inserted into the center of a cupcake comes out clean. Remove to a wire rack to cool completely.
💡 Top Tip: Gel food coloring is more concentrated than water-based color and will require less of it to achieve vibrant colors.

1. Using an electric hand mixer, whip together the mascarpone, cream cheese, powdered sugar, and vanilla until thick and fluffy. Be careful to not overmix.
2. Divide the frosting into two even portions and add food coloring to one of them, depending on your decorating preference.
💡 Top Tip: Overmixing the frosting may cause it to become runny so make sure you do not over whip it.
3. Assemble the Patriotic Cupcakes
1. Place the two portions of frosting next to each other on a sheet of kithcen foil. Then, roll up the foil and place it into a piping bag fitted with a nozzle tip.
2. Pipe the frosting on top of the cupcakes and decorate with sprinkles. You can additionally place a firework cocktail pick to make them look like firecracker cupcakes.
💡 Top Tip: Craft stores often have a better selection of high-quality sprinkles than grocery stores. These will make your cupcakes stand out.

Ingredients
For the red white blue cupcakes
- 113 g (½ cups) Unsalted butter room temperature
- 100 g (½ cups) Granulated sugar
- 1 Egg room temperature
- 135 g (1 cups) All purpose
- ½ teaspoon Baking powder
- ¼ taspoon Salt
- 80 g (⅓ cups) Whole milk room temperature, full fat (3%)
- ½ teaspoon White vinegar
- ½ teaspoon Baking soda
- Red and Blue gel food coloring good quality eg. Americolor
For the cream cheese frosting
- 220 g (1 cups) Cream cheese full fat (33%+) eg. Philadelphia
- 110 g (½ cups) Mascarpone full fat (41%+). Can be substituted with the same amount very cold! 36% heavy cream
- 65 g (½ cups) Powdered sugar sifted
- ½ teaspoon Vanilla extract
- food coloring optional
- sprinkles optional
US customary cup measurement is an indicative figure only. Measure the ingredients with a digital scale by weight (gram). Baking is art but also science which requires precision and accuracy.
Instructions
For the red white blue cupcakes
- Heat oven to 175 C / 347°F (no fan)
- With an Electric hand mixer whip room temperature butter and sugar together until pale and fluffy then whip the egg in. Do not overbeat.
- Start adding the dry and wet ingredients into the batter in the following 4 steps: wet, dry, wet, dry. With a Rubber spatula fold each time.
- Mix vinegar and baking soda together in a small bowl, it will be super bubbly. Immediately fold the mixture into the cupcake batter. This is the secret ingredient to keep the cupcakes moist without the taste of vinegar of course!
- Divide the mixture into 3 and color two of them into red and blue.
- Spoon or pipe the mixture into Cupcake pan till approx. ¾. You can layer the colors on each other or mix and match. This batch makes 6 large cupcakes.
- Bake for 25 min or until a skewer inserted comes out clean then let them cool on a cooling rack before decorating.
Cream cheese frosting
- Whip mascarpone, cream cheese, powdered sugar, and vanilla with an electric hand mixer for 2-3 minutes.
- When the frosting reaches a fluffy, pipeable consistency, stop right there and do not overmix. If you continue beating the frosting, it will separate and gets runny.
- Divide the frosting into two and add food coloring to one of them.
Assembling
- Place the 2 different flavors of frostings next to each other onto a kitchen foil, then roll up the kitchen foil and place it into a piping bag fitted with a nozzle tip.
- Pipe frosting on top, then decorate with sprinkles.
- Serve the cupcakes fresh, or store them refrigerated for 2-3 days.
Notes
- Use always unsalted butter in dessert recipes, but make sure you add the salt stated in the recipe as that will balance the sweetness
- The egg, butter, and milk should be used at room temperature to make the cupcakes
- Use full-fat milk and high-quality cream cheese and mascarpone when making the cream cheese frosting
- Use high quality gel food coloring eg. Americolor as liquid food coloring can break the frosting and also won´t provide bright colors
- Digital scale is required for a consistent, happy baking experience:)
