Best Apple Crumb Cake Recipe
This easy apple crumb cake recipe is not only super delicious but also incredibly simple to follow (even for beginners)! It is very similar to your typical cinnamon coffee cake recipe but with much more crumble and the sweet flavor of apples. Some may call it an apple crumble coffee cake!
You'll start by creating the crumble, the fresh apple topping, and the moist and flavorful cinnamon batter. Once it bakes, you'll make and apply the sweet apple glaze for the finishing touch!
This apple crumble cake recipe uses the freshest, highest-quality ingredients to create a mouthwatering, sweet, and soft buttery cake that is 100% made from scratch. No special ingredients are required, and you may already have most of the ingredients in your pantry!
Make The Crumble
Start by making the crumble topping. First, cut the butter into small pieces and let it sit until it reaches room temperature. I recommend taking it out of the fridge an hour in advance. Use unsalted butter to avoid adding salt to the recipe.
Next, whisk together the all purpose flour, salt, granulated sugar, and brown sugar. Don't skip the salt; it is essential to balancing the flavors! Sifting the ingredients first is a good idea to avoid lumps in the batter. Feel free to add oats or chopped nuts in place of some of the flour.
Afterward, add the softened butter chunks. Use a rubber spatula or wooden spoon to gently mix the ingredients until the flour, salt, and sugar are coated with butter.
Press the mixture together with your fingers to adjust the size of the crumbs to your liking. Place your finished streusel crumble in the fridge while you prepare the cake batter and apple topping!
Prepare the Apple Topping
If desired, peel the apples. Then, remove the core and cut them into small chunks. Sprinkle the pieces with freshly squeezed lemon juice to prevent them from browning while you continue the recipe.
Thoroughly mix the apple pieces with the sugar and cinnamon, then set them aside. The amount of sugar you use may vary depending on how sweet the apples are. The crumble will also provide plenty of sweetness, so you may not need sugar at all!
Make the Cake Batter
Before starting on the cinnamon cake batter, preheat the oven to 175°C / 347°F and line the bottom of a 23cm / 9-inch round springform pan with parchment paper.
Whisk together the yogurt, eggs, sugar, and oil in a mixing bowl. The yogurt and eggs should be at room temperature to emulsify correctly. Next, add the vanilla extract.
Sift the flour, cinnamon powder, salt, baking powder, and baking soda in a separate bowl. Then, use a rubber spatula to fold the dry ingredients into the wet ingredient mixture, only until just combined.
Pour the batter into the prepared pan and use an offset spatula to smooth the top. Then, place the coated apple chunks on top of the batter and gently press some of them into the batter. Avoid mixing the apples into the batter, as it will cause them to sink to the bottom.
Lastly, remove the crumble from the fridge and spread a thick layer on top.
Bake The Apple Crumb Cake
Place the pan in the oven and bake for 60-70 minutes, or until it passes the toothpick test (when a toothpick inserted comes out clean). Cover the top with aluminum foil if you notice the cake is browning too quickly.
Once thoroughly baked, remove it from the oven and let it cool to room temperature.
Mix the apple juice with the powdered sugar to make the glaze, then spoon it over the cooled cake.
Storing & Freezing
If you have leftovers of your apple crumb cake, you can store them at room temperature in an airtight container for 2-3 days. You can also preserve its freshness by placing the container in the refrigerator.
To freeze, wrap the cake tightly in plastic wrap, then store it in the freezer for up to three months.
Flavor Variations
One of the best parts about this apple crumble cake recipe is that you can customize it with several variations!
For the crumble:
Spices: Enhance the warm flavor with pumpkin spice, ginger, or cardamom.
Different Sugar: For a more caramel-like flavor, omit the white sugar and use only brown sugar. Add coconut sugar for a tropical taste. You can also use all white sugar!

Ingredients
Cinnamon sponge cake
- 120 g (½ cups) Vegetable oil
- 200 g (1 cups) Granulated sugar
- 100 g (½ cups) Brown sugar
- 3 Eggs at room temperature
- 180 g (¾ cups) Yogurt thick Greek or Turkish style yogurt at room temperature
- 1 teaspoon Vanilla extract
- 310 g (2½ cups) All purpose flour
- 1 teaspoons Baking powder
- 1 teaspoon Baking soda
- 1 teaspoon Cinnamon powder
- ½ teaspoon Salt
Apple Topping
- 500 g (4 cups) Apples Core the apples, then cut into small chunks. Apples can be peeled, but not necessary.
- 1 tablesooon Lemon juice Freshly squeezed
- 50 g (¼ cups) Granulated sugar Can be also potentially left out, as the crumb topping will provide enough sweetness
- 1 teaspoon Cinnamon powder
Crumb
- 150 g (1¼ cups) All purpose flour
- 100 g (½ cups) Granulated sugar
- 50 g (¼ cups) Brown sugar
- 110 g (½ cups) Unsalted butter at room temperature
- pinch of salt
Glaze
- 90 g (¾ cups) Powdered sugar
- 2-3 tablespoons Apple juice
US customary cup measurement is an indicative figure only. Measure the ingredients with a digital scale by weight (gram). Baking is art but also science which requires precision and accuracy.
Instructions
Start with the crumb
- Cut butter into small chunks and let it come to room temperature.
- Whisk together flour, salt, granulated sugar, and brown sugar, then add the room temperature butter chunks to the mixture and mix with a spatula or wooden spoon just until the dry ingredients are coated with the butter.
- You can make sand-like crumbs or larger crumbs by simply pressing the mixture together using your fingers. Place the crumble into the fridge, while preparing the cake batter and apple topping.
Make the apple topping
- Cut the apples into small chunks and sprinkle with the lemon juice to avoid browning while preparing the sponge layer.
- Then, mix with the granulated sugar with the cinnamon powder and set it aside.
Make the cinnamon cake batter
- Heat oven to 175°C / 347°F and line a 23cm / 9-inch round pan with parchment paper.
- Whisk together the room temperature yogurt, eggs, sugar, and oil. Then, add the vanilla extract.
- Sift the flour, cinnamon powder, salt, baking powder, and baking soda together in a separate bowl.
- Fold the dry ingredients into the wet ingredients using a rubber spatula. Mix just until combined.
- Pour the cake batter into the prepared pan and smooth the top with an offset spatula.
- Place the apple chunks on top of the cake batter and gently press some of the apples into the cake batter.
- Then, finish with a thick layer of crumble on top.
Bake
- Bake the cake for 60-70 minutes or until a toothpick inserted comes out clean. If the cake was browning too much, cover the top with aluminum foil.
- Let the cake come to room temperature before glazing.
- For the glaze, mix the apple juice with the powdered sugar and glaze the top of the cake with the help of a spoon.
- Store any leftover cake refrigerated or at room temperature in an airtight container for 2-3 days.
Notes
- Measure your ingredients with a digital scale for accuracy.
- For the cake batter, make sure that all the ingredients are at room temperature.
- For the crumb topping, do not skip the salt; it will balance the flavor. Use good quality 82% unsalted butter. Feel free to add nuts or oats to this mixture in place of some of the flour.

- Bake the cake until the toothpick check; the toothpick should come out dry. However, do not overbake the cake after this, as overbaked cake can become dry.
- Make sure to place parchment paper on the bottom of the cake pan - it is very handy later to move the cake around.
- Cut the apples into rather small chunks and press them into the batter properly. It is a better technique than mixing the apples into the batter beforehand, as that often results in all the apples ending up at the bottom of the cake.
- For the crumb, some recipes recommend using melted butter or cold butter. With cold butter, you would have to work the mixture a bit longer, as the butter slightly needs to be warmed up to coat the dry ingredients, but eventually, the same result can be achieved. With melted butter, you would have to chill the mixture for the butter to somewhat set and being able to form the crumbs. Therefore, I suggest working with room-temperature butter, which is just perfect for creating the crumbs.

Cake is quite sweet to my taste (and I didn't even put the sugar on apples), but that didn't bother another 8 people who very much enjoyed their slice of it. Hey, I am so sorry to hear. I just baked this cake a week ago and the ingredient quantities are precisely fitting the tin I mention in the recipe. All I can think of is that 1. you are using cup measurement that is highly inaccurate and maybe there was a small mistake there 2. your tin is shorter than mine 3. your oven is overheating therefore the cake is rising much quicker without "setting". This is a tall cake for sure but by the time the cake should rise tall, it should already be set and would not overflow.
