Resting the pie dough in the fridge for a minimum of 2 hours is mandatory, otherwise, believe me, you won´t be able to work with the dough and it is effectively impossible to roll it out.

For the Apple Hand Pies you will need apples, butter, sugar and pie dough that is rested in the fridge for 2 hours

After chilling the dough, roll it until you reach 3mm thickness, then cut out circles with a cookie cutter. Refrigerate them for 15 min. before filling.

The apple filling, that you can flavour with tons of different spices, comes together in less than 10 minutes, but it must be cooled to room temperature before using.

Cutting slits on the top circles will help the steam to escape as the hand pies bake. Place them on top of the filling, press your fingers all around the edges to properly seal, then crimp with a fork.

After 15 minutes freezing,   bake the hand pies in preheated oven at 190C / 374F (no fan) for about 30 minutes. Let pies slightly cool on the baking tray for 5 minutes then move them onto a cooling rack.
