Made with fresh apples, cinnamon, sugar, and a light and flaky puff pastry crust, these apple roses with puff pastry aren’t just eye-catching but mouthwateringly delicious.
Thaw the puff pastry sheets (if using frozen), but make sure they are still cold.
Prepare a bowl with the water and the lemon juice.
Do not peel the apples. Cut them in halves, remove the cores, and then cut the apples into very thin slices. Place the sliced apples in the bowl so that they don't start to brown.
Microwave the apples for about 5 minutes until the slices slightly soften (become flexible). Do not overcook. Once the slices are cooked, remove them from the water one by one and soak the exess water with the help of paper kitchen towels.
Mix the cinnamon with granulated sugar.
Pre-heat the oven to 190C / 370F (no fan).
Grease 12 cavities of your muffin pan.
Unfold one of the puff pastry sheets and cut each pastry lengthwise into 6 strips. Once the first sheet is done, do the same with the second sheet
Arrange the apple slices on the pastry, overlapping one another, as shown in the process picture. Make sure that the skin side of the slices are a little out of the strip. Sprinkle with cinnamon sugar.
Fold the pastry in half to cover the apples.
If at any point the puff pastry would become warm to handle, pop it into the freezer or fridge for a few minutes to chill. Do not force the pastry if it warms up.
Starting on one end, roll the pastry and apples to the other end of the pastry, then place it into the muffin tin. Continue with the rest.
Bake them at 190C / 370F (no fan) for about 45 minutes. Cover the apple roses after about 15 minutes to avoid them browning too much.
Let them slightly cool in the baking tray for 3 minutes then move them onto a cooling rack.
The apple roses are the best served fresh. Any leftovers can be stored at room temperature for 2-3 days in an air-tight container.
Notes
Cook the apple slices only until they become flexible.
Work as quickly with the pastry as you can as over time, when the pastry warms, it will stick and would make it very difficult to handle.
Check the bottom of the pastry - whether it is well baked.
