💡 Expert Tip: Make sure to cut the apples into identical size pieces so that they cook evenly. You don't want some pieces overcooked and others undercooked.

Start with the apple filling. Add the peeled and cut apples, unsalted butter, sugars, cornstarch, and cinnamon to a saucepan and cook the mixture until the apples are slightly soft.
Roll the puff pastry out into a 28 cm / 11 inches square, then cut it into four equal squares. Brush the edges with egg wash, then place 1-2 tablespoons of the cooled apple filling in the center.

Fold one corner of the pastry over the filling to the other corner to make a triangle. Press the edges together with your finger to seal them and then crimp them with a fork. Lightly brush with egg wash, and sprinkle sugar.
Chill the turnovers for 15 minutes before baking at 190 C / 374 F (no fan) for 30 minutes until golden brown. Let them cool down completely. Apple turnovers are best served fresh out of the oven.
