Biscoff Butter Cookies

Biscoff butter cookies are the most delicious chocolate chip cookies loaded with Lotus Biscoff spread, cinnamon, and brown sugar, resulting in an indulging treat for everyone in the family!

Don't bother smoothing the surface of the dough balls before baking. You want to keep them rough for a nice crackly surface after baking.

The recipe can be made with simple room temperature ingredients; eggs, butter, flour, sugar and Biscoff

Start with whipping butter and sugar together, then add egg, biscoff spread and vanilla too. Into this wet mixture, fold in the dry ingredients, then chocolate chips and Biscoff cookie chunks.  

It's important to let the cookie dough rest in the fridge for at least 1 hour. (or in the freezer for 20 minutes) This will prevent the dough from over-spreading later in baking.

Bake the chilled cookies in preheated oven at 175 C / 347 F (no fan) for 10 minutes. Then, place Biscoff cookie pieces on top of each cookie, and bake for further 5 minutes. You can shape the cookies to perfect round with a cookie cutter right after baking.

Let the cookies sit for a few minutes, alternatively, pipe or spoon some more Biscoff spread on top of them. Cool them on a cooling rack. Serve when they're slightly warm.
