Perfect Mango mousse Cake

Start with the buttery sponge base

Prepare he ingredients for the mango yogurt mousse

Use cream cheese frosting for decoration

Make a buttery sponge layer that is approx 1-inch / 2.5cm height to hold the mousse

To make the mango mousse, add the gelatine sheets to the puree.

Whisk in yogurt until fully incorporated

Cool down to room temperature

Fold whipped cream into the mango mixture and use the mousse immediately to assemble the Mango cake

For the marble effect, grab a toothpick and gently swirl the mango puree into the mango mousse

For decoration, pipe a small amount of cream cheese frosting on the top of the cake
