This Croissant Ice Cream Sandwich is a super lazy, super satisfying dessert made from store-bought croissants, caramelized in butter and sugar like French toast, then sandwiched around your favorite ice cream while still warm.
Slice each croissant in half horizontally, then flatten each half firmly with your hands or a rolling pin.
Spread softened butter over both sides of each croissant half, then press into granulated sugar to coat evenly.
Heat a skillet over medium heat. Lay the croissant halves in the pan and press them flat as they caramelize, until deeply golden. Flip and repeat on the other side.
While still hot, sandwich a scoop of ice cream between two halves. Serve immediately.

Ingredient notes:
Croissants that are a day or two old flatten and caramelize far more cleanly than fresh, super soft ones.
Use unsalted butter so you can control the sweetness and saltiness of the finished dessert yourself.
Technique notes:
Do not leave the pan unattended while the sugar caramelizes. It can go from golden to burnt in seconds.
