Hazelnut Butter

All you need is some unsalted raw hazelnuts and a super powerful blender to learn how to make hazelnut butter in just 20 minutes! It’s a really quick and easy 2-step recipe that produces velvety smooth, creamy, yummy hazelnut spread perfect for your favorite toast, adding to overnight oats, topping ice cream, or using in other recipes!

  • 400 g Hazelnut

How to make walnut butter

  • Pre-heat oven to 180 C / 356 F ( no fan).
  • Spread the hazelnuts on a baking tray in a single layer and toast them for 10-12 minutes, until fragrant and slightly darker in color.
  • While the hazelnut is still warm, remove as much skin as you can by rubbing them in between your hands using a kitchen towel.
  • Let the hazelnut come to room temperature before processing them.
  • Transfer the hazelnut to your blender or food processor and start processing them on high power taking a break every 30-60 seconds. Scrape down the sides with a spatula during the breaks.
  • The hazelnut will first break into a crumb-like consistency, then into a thick hazelnut paste, then it will get creamier, followed by a silky smooth liquid texture.
  • The process can take anywhere in between 2-10 minutes depending on the power of your machine. For me, it took 2 minutes to get a super smooth and runny hazelnut butter.
  • You can add a pinch of salt, sugar, or another sweetener, cocoa powder, or spices after you achieved the right consistency on your hazelnut butter.

How to store homemade hazelnut butter

  • Store the hazelnut butter refrgeirated in an airtight jar for 4-6 weeks.

Notes

  1. Roasting the hazelnuts in the oven will make the nut butter more flavorful and easier to process, do not skip this step
  2. You need to use a high-speed blender or food processor to make this hazelnut spread recipe. My blender is 1600w. A standard machine can’t handle nuts and will burn down.
  3. Hot nuts can overheat your machine. The hazelnuts must cool to room temperature before you can process them.
  4. If you’re having trouble blending the hazelnuts even after 10 minutes, you can slowly add a bit of coconut oil, water, or maple syrup to loosen them up. 
  5. Any extra ingredients must be added to the nut butter after it’s made or it can cause it to seize up and not process well.
