Homemade Lotus Biscoff Spread (VIDEO)

With its rich caramelized taste, Lotus Biscoff spread can be a great addition to your favorite baked goods! You can enjoy this Speculoos spread on top of your crunchy waffle, moist pancake, cupcakes, cakes, brownies, and so on! It is a super easy and quick recipe and crazy delicious!

Ingredients

  • 250 g Lotus Biscoff biscuits 1 bag (8.8oz)
  • ½ teaspoon Salt
  • ½ teaspoon Cinnamon
  • ½ teaspoon Vanilla extract
  • 25 g Golden syrup can be substituted with another dark syrup or brown sugar
  • 130 g Evaporated milk
  • 2 teaspoon Lemon juice freshly squeezed

Instructions

  • The Biscoff Crumble can be made either in a food processor, or in a ziplock bag and beating it with a rolling pin until the cookies more or less evenly broken up
  • Then, move the mixture to the food processor and add the rest of the ingredients
  • Start processing the mixture for 2-3 minutes until the spread is super smooth. For a more rustic, crunhy texture, only process it for 30 seconds
  • If desired, add more Biscoff biscuits or evaporated milk to make the spread thicker / thinner
  • Use the spread according to the recipe
  • Store it in an airtight jar and keep it refrigerated for up to two weeks

Notes

  1. Keep an eye on the mixture during the food processing. Know what your preference is and stop the food processor when it achieved your desired texture.
  2. Check the consistency of the mixture after the food processing. If you feel that it’s too thick, add more evaporated milk and re-process the mixture. If you feel that it’s too thin, add more biscuits to the mixture and re-process the mixture.
  3. Do not skip the salt and lemon juice! It’s an important ingredient to balance the taste of your Lotus cookie butter spread
  4. You can experiment by adding more cinnamon or vanilla to adjust the flavor to your preference. You can even try other spices such as nutmeg, pumpkin spice or cardamom
