  • 100 g chocolate semi sweet, good quality
  • 80 g Unsalted butter
  • 90 g Granulated sugar
  • 3 Eggs
  • 20 g Cocoa powder unsweetened Dutch processed
  • 100 g Hazelnut flour ground hazelnut
  • 1/2 teaspoon Salt

US customary cup measurement is an indicative figure only. Measure the ingredients with a digital scale by weight (gram). Baking is art but also science which requires precision and accuracy.


  • Pre-heat oven to 170C / 338°F
  • Melt chocolate in a bowl over simmering water (double boiler) then put aside
  • Beat room temperature butter and half of the sugar until very pale and fluffy and at least double in volume
  • Mix in egg yolks into melted chocolate (wait until chocolate is not too warm), one at a time, beat well each time
  • Fold chocolate and butter mixture together
  • Sift in cocoa powder and gently fold into the mixture
  • Pour in hazelnut flour with salt and very gently fold into the mixture
  • Beat eggs white with the other half of the sugar by adding the sugar very slowly, one tablespoon at at time. Beat until stiff peaks
  • Very gently fold egg whites into the hazelnut chocolate mixture in 3 steps. Make sure the batter stays airy and fluffy
  • Grease 15 cm spring form or mousse ring with butter and cocoa powder
  • Very gently with a help of a spatula fold the mixture into the the tin and even the top with an offset spatula
  • Bake for 30 min, make sure not to over bake, the texture inside the cake should be similar to a fudgy brownie, while outside it is crispy like a meringue
  • Once cooled down, dust with unsweetened cocoa powder
